- Harvest Date: 7th April 2009, hand harvested
- Brix: 25.4 Brix
- Fermentation: 100% French oak, 25% new
- Alcohol: 14.5%
- Residual Sugar: 2.4 g/l
- pH: 3.52

Cellar Notes
Low cropped and hand-harvested, the fruit was further hand-sorted then gently pressed, clarified and racked clean to barrel for native yeast fermentation. The wine was then aged in French Oak barriques over winter. The barrels were tasted over spring when the natural malolactic bacteria become active and SO2 added when the acids tasted in balance with only partial natural malolactic fermentation retaining the wines focus and crisp acidity. The wine spent a total of 16 months in French Oak before blending and bottling and putting down for further cellaring before release.
Tasting Notes
This is a nutty, complex and savoury wine that has good concentration and is well balanced. There is ripe peach and nectarine on the aroma with a subtle oak influence. A very elegant wine made in a fruit driven style with restraint and complexity. While satisfying in its youth this is a wine suitable for long term ageing and an excellent food wine.
